Easy Crockpot Butternut Squash and Apple Soup

A velvety, café-quality butternut squash soup made effortlessly in a slow cooker with sweet apple and warm spices. Perfect for busy weeknights and meal prep.

  • 1 medium butternut squash (about 23 pounds), peeled, seeded, and cut into 1-inch cubes
  • 2 medium apples (such as Honeycrisp, Fuji, or Gala), peeled, cored, and roughly chopped
  • 1 medium yellow onion, roughly chopped
  • 2 cloves garlic, smashed or roughly chopped
  • 4 cups low-sodium vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Salt and black pepper to taste
  • ½ cup half-and-half or heavy cream (optional)

Instructions

  1. Prep the squash: Use a sharp vegetable peeler to remove the skin, cut the squash in half lengthwise, scoop out seeds and stringy bits, and cut into 1-inch cubes.
  2. Sauté the aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 4-5 minutes until translucent. Add smashed garlic and cook for another minute until fragrant.
  3. Layer everything in the slow cooker: Add cubed squash, chopped apples, sautéed onion and garlic, ground ginger, cinnamon, nutmeg, and a generous pinch of salt and pepper. Pour vegetable broth over everything and stir.
  4. Cook low and slow: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until squash is fork-tender.
  5. Blend until smooth: Turn off the slow cooker. Use an immersion blender to blend until smooth, or let cool for 10 minutes and blend in batches in a countertop blender.
  6. Finish with cream (optional): Stir in half-and-half or heavy cream if using. Taste and adjust seasoning.
  7. Serve hot: Ladle into bowls and garnish with desired toppings.

Notes

Don’t skip sautéing the onion and garlic for best flavor. Cut squash into even 1-inch cubes for uniform cooking. Taste before adding extra salt as broth saltiness varies. For a vegan version, skip the cream or use full-fat coconut milk. Soup thickens as it sits; add broth when reheating if needed.
