This Easy Crustless Spinach and Feta Breakfast Casserole is light, fluffy, and packed with protein. It’s perfect for meal prep, low-carb diets, and lazy weekend mornings.

  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 8 ounces feta cheese, crumbled
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/2 cup finely diced onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/4 teaspoon nutmeg
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Place your baking dish on the middle rack while it preheats. Grease the dish well with nonstick spray or butter.
  2. Prepare the spinach: Thaw the frozen spinach completely. Place the thawed spinach in a clean kitchen towel, gather the corners, and squeeze out as much liquid as possible.
  3. Sauté the aromatics: Heat a small pan over medium heat with a teaspoon of olive oil. Add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for another 30 seconds. Set aside to cool slightly.
  4. Whisk the eggs: In a large bowl, crack all 10 eggs. Add the milk, heavy cream, salt, pepper, nutmeg, and red pepper flakes. Whisk vigorously for a full 60 seconds until pale yellow and frothy.
  5. Combine everything: Add the squeezed-dry spinach, sautéed onion and garlic, crumbled feta, shredded mozzarella, and grated Parmesan to the egg mixture. Stir gently with a spatula until evenly distributed.
  6. Pour and bake: Pour the mixture into the greased baking dish and spread into an even layer. Bake for 30-35 minutes, until the center is just set and the top is golden brown. A knife inserted in the center should come out clean.
  7. Rest before serving: Let the casserole rest for 5-10 minutes before cutting into it. This allows the eggs to finish setting and makes for cleaner slices.

Notes

The biggest mistake is not drying the spinach enough. Squeeze it thoroughly to avoid a watery casserole. Room temperature eggs incorporate more air for a fluffier texture. Don’t skip the nutmeg—it enhances the spinach flavor. Let the casserole rest before cutting for clean slices.
