A quick and refreshing no-cook snack featuring cherry tomatoes, fresh mozzarella, and basil on skewers, perfect for summer gatherings and light bites.

  • 1 pint (about 300g) cherry tomatoes, washed and dried
  • 8 oz (225g) fresh mozzarella balls (Bocconcini or Ciliegine), drained well
  • 20 to 25 fresh basil leaves, washed and patted dry
  • 2 to 3 tablespoons extra virgin olive oil
  • 1 to 2 tablespoons balsamic glaze (optional)
  • Pinch of sea salt or flaky salt
  • Freshly ground black pepper (optional)
  • 6 to 8 inch wooden or bamboo skewers, soaked in water for 10 minutes if grilling or used as-is for no-cook

Instructions

  1. Wash and dry the cherry tomatoes and basil leaves thoroughly. Drain the mozzarella balls and pat dry with paper towels to avoid excess moisture. (About 10 minutes)
  2. Take one skewer and thread a cherry tomato first, then fold a basil leaf in half gently and slide it on, followed by a mozzarella ball. Repeat this pattern until the skewer is full, typically 3 to 4 sets per skewer. (15 minutes for 12 skewers)
  3. Lay the skewers neatly on a serving platter, spacing them evenly so they look inviting and colorful.
  4. Lightly sprinkle flaky sea salt and freshly ground black pepper over the skewers. Then drizzle extra virgin olive oil generously over everything. Optionally, add a drizzle of balsamic glaze for a sweet tangy contrast. (2 minutes)
  5. Let the skewers sit at room temperature for about 5 minutes before serving so the flavors meld nicely. (Optional but recommended)

Notes

Use the freshest produce possible for best flavor. Drain mozzarella well to avoid sogginess. Fold basil leaves gently to prevent tearing. Add salt and olive oil just before serving to keep skewers fresh. Store leftovers covered in the fridge and consume within 24 hours. For vegan version, substitute mozzarella with marinated tofu or vegan cheese.
