  • 4 ripe peaches, halved and pitted
  • 2 cups vanilla ice cream

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 400°F or 200°C), about 5 minutes.
  2. Rinse and halve 4 ripe peaches. Use a sharp knife to carefully remove the pits.
  3. Place peaches cut-side down on the grill. Cook undisturbed for 3–4 minutes until grill marks and golden caramelization appear.
  4. Flip peaches using tongs and grill for another 2–3 minutes with the skin side down until soft and warm with a smoky char.
  5. Remove peaches from grill and transfer to serving plates.
  6. Immediately top each peach half with a generous scoop of vanilla ice cream.
  7. Optionally, drizzle honey or sprinkle chopped fresh mint on top before serving.

Notes
