Ingredients

Scale
  • 1 lb (450g) ground turkey (93% lean recommended)
  • 1 tbsp (15ml) avocado oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp (16g) chili powder
  • 1 tbsp (7g) ground cumin
  • 1 tsp (3g) smoked paprika
  • 1/2 tsp (1g) dried oregano
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 1 cup (240ml) tomato salsa (medium heat recommended)
  • 1 can (15 oz / 425g) fire-roasted diced tomatoes, drained
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 cup (150g) corn kernels (frozen or canned, drained)
  • 1/4 cup (15g) fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Prep your ingredients: dice onion, mince garlic, drain and rinse black beans and corn, drain fire-roasted tomatoes.
  2. Heat avocado oil in a large skillet over medium-high heat. Add ground turkey and break into crumbles. Cook undisturbed for 3-4 minutes to brown, then continue cooking until no pink remains. Drain excess liquid if needed.
  3. Reduce heat to medium. Add diced onion and cook for 2 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle chili powder, cumin, smoked paprika, dried oregano, salt, and pepper over the meat and onions. Stir constantly for 1 minute to bloom the spices.
  5. Pour in salsa and drained fire-roasted tomatoes. Stir, scraping up browned bits from the pan. Add black beans and corn. Bring to a gentle simmer, then reduce heat to low and cook for 5-7 minutes, stirring occasionally, until sauce thickens slightly.
  6. Remove from heat. Squeeze lime juice over the top and stir in chopped cilantro. Taste and adjust seasoning if needed. Serve immediately.

Notes

For a less spicy version, use mild salsa and reduce chili powder by half. For a keto version, omit black beans and corn and add diced bell pepper and zucchini. Leftovers can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months.
