Ingredients

  • Large round wooden board or platter (12-16 inches in diameter)
  • Fresh rosemary sprigs (for the wreath base and garnish)
  • Fresh cranberries or pomegranate seeds (for color and tartness)
  • Prosciutto (6-8 slices, thinly sliced)
  • Salami (4-6 ounces, sliced into rounds)
  • Pepperoni (optional, for a spicier kick)
  • Brie (one small wheel, about 8 ounces)
  • Sharp cheddar (4-6 ounces, cubed or sliced into triangles)
  • Manchego or Gouda (4 ounces, sliced)
  • Goat cheese log (4 ounces, sliced into rounds, optional)
  • Water crackers or plain crackers (about 4 ounces)
  • Baguette slices (thinly sliced, toasted or fresh)
  • Breadsticks or grissini (a handful)
  • Olives (a mix of green and black, about ½ cup)
  • Dried apricots or figs (½ cup, halved)
  • Honey or fig jam (a small bowl for drizzling)
  • Fresh fruit (red grapes, apple slices, or star fruit)
  • Nuts (almonds, walnuts, or pecans, about ½ cup)
  • Fresh herbs (thyme sprigs, bay leaves, or edible flowers)

Instructions

  1. Start with the base. Place your round board on a clean work surface. Arrange fresh rosemary sprigs in a loose circle around the outer edge of the board, creating a wreath-like border. The sprigs should overlap slightly, with the leaves pointing outward.
  2. Position the cheese. Place the brie wheel at the top center of the board (12 o’clock position). Arrange the cheddar cubes in a small cluster at the bottom (6 o’clock). Place the manchego slices in a fan shape on the left side (9 o’clock). Put the goat cheese rounds on the right side (3 o’clock).
  3. Add the meats. Fold each prosciutto slice in half lengthwise, then roll loosely into a rose shape. Place these roses around the board, spacing them between the cheese clusters. Arrange salami slices in overlapping rows near the prosciutto. If using pepperoni, scatter it in small piles.
  4. Fill in with crackers. Place water crackers in small clusters around the board, tucking them between the cheese and meat. Arrange baguette slices in a fan pattern near the manchego. Stand breadsticks upright in a small glass or lean them against the brie for height.
  5. Add the garnishes. Spoon olives into a small bowl and place it near the center or edge. Put honey or fig jam in another small bowl. Scatter dried apricots and nuts in the empty spaces. Add fresh fruit—red grapes look gorgeous draped over the cheese, and apple slices add a fresh crunch. Sprinkle pomegranate seeds or cranberries over the entire board.
  6. Finish with herbs. Tuck small thyme sprigs or bay leaves into gaps around the board. Add a few edible flowers if you have them. Drizzle a little honey over the brie wheel for a glossy finish.
  7. Serve immediately or chill. This board is best served at room temperature, so if you’ve refrigerated the cheese, let it sit out for 15-20 minutes before serving.

Notes

Don’t overthink the folding of prosciutto—loose folds work just as well as perfect roses. Layer strategically by placing items that need bowls first. Keep textures balanced with something creamy, crunchy, salty, and sweet. Take cheese out of the fridge 20 minutes before assembling for best flavor. You can prep all ingredients the night before and assemble in 10 minutes before guests arrive.
