This homemade pumpkin spice syrup for lattes is made with real pumpkin and warm spices, offering a deeper, more complex flavor than store-bought versions. It’s quick, easy, and perfect for cozy fall mornings.

  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar (light or dark)
  • 1/4 cup pumpkin puree (100% pure pumpkin, not pumpkin pie filling)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract (pure)
  • Optional: 1/4 teaspoon ground cinnamon
  • Optional: Pinch of salt

Instructions

  1. Combine the sugars and water. Add 1 cup water, 1 cup granulated sugar, and 1/2 cup packed brown sugar to a medium saucepan. Place over medium heat and whisk gently until the sugars dissolve completely, about 2-3 minutes.
  2. Add the pumpkin puree and spices. Whisk in 1/4 cup pumpkin puree, 2 teaspoons pumpkin pie spice, and the optional pinch of salt. Keep whisking until fully incorporated.
  3. Bring to a gentle simmer. Increase heat slightly until small bubbles form around the edges, then reduce heat to low to maintain a gentle simmer.
  4. Simmer for 10 minutes. Stir occasionally. The syrup will darken slightly.
  5. Remove from heat and add vanilla. Stir in 1 teaspoon vanilla extract.
  6. Let it cool slightly for 5-10 minutes.
  7. Strain through a fine-mesh strainer into a heat-safe glass jar or bowl. Use the back of a spoon to press on solids to extract all syrup. Discard solids.
  8. Cool completely before sealing. Let the syrup cool to room temperature in the jar without the lid, then screw on the lid and refrigerate.

Notes

Don’t skip the straining step to avoid gritty texture. Use a thermometer if available; ideal temperature is around 220°F (104°C). Let spices bloom in warm liquid for about 30 seconds before adding vanilla. The syrup thickens slightly as it cools. If too thick, thin with warm water a tablespoon at a time. Store in an airtight glass jar in the refrigerator for up to 2-3 weeks. Can be frozen in ice cube trays for up to 3 months.
