Easy Maple Bourbon Pecan Pie Brownies

Fudgy brownies topped with a sticky, boozy, maple-kissed pecan pie layer. This happy accident turned into the best dessert, combining two classics into one perfect bite with a warm, complex flavor.

  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (100g) light brown sugar, packed
  • 1/2 cup (120ml) pure maple syrup
  • 2 large eggs
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 tablespoon bourbon (optional)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups (180g) pecan halves or chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  2. Make the brownie batter: In a medium bowl, whisk together melted butter and granulated sugar until smooth. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  3. Sift cocoa powder, flour, salt, and baking powder into the wet mixture. Fold gently with a rubber spatula until just combined. Do not overmix.
  4. Spread brownie batter evenly into the prepared pan. Set aside.
  5. Make the pecan pie topping: In another bowl, whisk together brown sugar, maple syrup, eggs, melted butter, bourbon, vanilla extract, and salt until smooth. Stir in pecan halves until fully coated.
  6. Gently pour the pecan mixture over the brownie batter. Do not stir.
  7. Bake for 35-40 minutes. At 35 minutes, insert a toothpick into the center. The brownie layer should be set but the pecan topping should still have a slight jiggle. If toothpick comes out with wet batter, bake 3-5 more minutes.
  8. Cool completely in the pan on a cooling rack for at least 1 hour. This is crucial for the pecan topping to set.
  9. Use parchment overhang to lift the entire block out of the pan. Place on a cutting board and slice into 9 or 16 squares. Wipe knife between slices for clean cuts.

Notes

Room temperature eggs are important for even mixing. Don’t overbake; the pecan topping should have a slight jiggle when removed from the oven. Cool completely before slicing to prevent a runny topping. Toast pecans in a dry pan for 5 minutes for extra flavor. For gluten-free, use 1:1 gluten-free baking flour. For dairy-free, use vegan butter (stick variety). Bourbon can be substituted with 1 teaspoon vanilla extract mixed with 1 tablespoon water.
