These mini Caprese skewers combine fresh mozzarella, cherry tomatoes, and basil, drizzled with a sweet-tangy homemade balsamic glaze. Perfect as a quick, crowd-pleasing appetizer for any occasion.

  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine)
  • 1 pint cherry or grape tomatoes (about 300 g), washed and dried
  • About 20 small fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • ½ cup balsamic vinegar (120 ml)
  • 1 tablespoon honey or brown sugar (15 g)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • About 20 wooden skewers or toothpicks

Instructions

  1. Prepare the balsamic glaze: Pour ½ cup (120 ml) balsamic vinegar into a small saucepan over medium heat. Add 1 tablespoon (15 g) honey or brown sugar and stir gently to combine.
  2. Bring the mixture to a simmer, then reduce heat to low. Let it gently bubble, stirring occasionally, until the liquid thickens by about half and coats the back of a spoon, about 10-15 minutes. Remove from heat and let cool to room temperature.
  3. While the glaze cools, rinse and dry the cherry tomatoes and basil leaves thoroughly. Slice larger tomatoes in half if needed.
  4. Drain the mozzarella balls and pat dry with paper towels to avoid sogginess.
  5. Assemble the skewers by threading a cherry tomato first, followed by a folded basil leaf, then a mozzarella ball onto each wooden skewer or toothpick.
  6. Place the assembled skewers on a serving platter.
  7. Just before serving, lightly drizzle extra virgin olive oil over the skewers and season with salt and freshly ground black pepper.
  8. Drizzle the cooled balsamic glaze evenly over the skewers using a spoon or squeeze bottle.

Notes

Make the balsamic glaze low and slow to avoid burning. Dry all ingredients well to prevent sogginess. The glaze can be made a day ahead and stored refrigerated. Add glaze just before serving. Wooden skewers about 3 inches long work best. For dairy-free, substitute mozzarella with vegan cheese balls.
