Ingredients

Scale
  • 1 pound (450g) ground turkey (93% lean)
  • 1/2 cup (60g) breadcrumbs (plain or Italian-style; use gluten-free if needed)
  • 1 large egg, lightly beaten
  • 1/4 cup (25g) finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil (or avocado oil)
  • For the ranch dip: 1/2 cup (120ml) buttermilk, 1/2 cup (120g) sour cream or Greek yogurt, 1 tablespoon fresh chives (chopped), 1 teaspoon dried dill, 1/2 teaspoon garlic powder, 1/4 teaspoon onion pow…
  • 810 short skewers (about 6 inches long; wooden or metal)

Instructions

  1. Make the ranch dip (optional but highly recommended): In a small bowl, whisk together buttermilk, sour cream (or Greek yogurt), chives, dill, garlic powder, onion powder, salt, and pepper. Taste and adjust seasoning. Cover and refrigerate while you make the meatballs.
  2. Prepare the meatball mixture: In a large mixing bowl, combine ground turkey, breadcrumbs, beaten egg, Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and black pepper. Use your hands to mix gently until just combined. Do not overmix.
  3. Roll the mini meatballs: Using your palms, roll the mixture into small balls about 1 inch in diameter. You should get around 24-28 mini meatballs. Place them on a baking sheet or plate lined with parchment paper. Wet your hands slightly with cold water to prevent sticking.
  4. Cook the meatballs: Heat olive oil in a large skillet over medium heat. Once shimmering, add the meatballs in a single layer (cook in two batches if needed). Cook for 6-8 minutes total, turning every 2-3 minutes, until golden brown on all sides and cooked through (internal temperature of 165°F/74°C).
  5. Cool the meatballs: Transfer cooked meatballs to a plate lined with paper towels to absorb excess oil. Let cool for about 5 minutes.
  6. Assemble the skewers: Once cool enough to handle, thread 3-4 meatballs onto each skewer, leaving a little space between each. Serve with ranch dip on the side.

Notes

If you don’t have a skillet, bake the meatballs at 400°F (200°C) for 12-15 minutes, flipping halfway. For extra crispy meatballs, air fry at 375°F (190°C) for 8-10 minutes. Chilling the rolled meatballs for 15-20 minutes before cooking helps them hold their shape. Store cooked meatballs (without skewers) in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
