A simple, fuss-free zucchini bread recipe that uses a one-bowl method for easy preparation and cleanup. This moist and tender bread is perfect for breakfast, snacks, or potlucks.

  • 1 ½ cups all-purpose flour (190g)
  • ¾ cup packed brown sugar (150g)
  • ½ cup vegetable oil (120ml)
  • 2 large eggs, room temperature
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts or pecans, or ½ cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick spray or line it with parchment paper.
  2. Grate about 2 cups of zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towels and gently squeeze out excess moisture, leaving some moisture for a moist bread.
  3. In a large mixing bowl, whisk together ½ cup vegetable oil, ¾ cup packed brown sugar, 2 large eggs, and 1 teaspoon vanilla extract until smooth and glossy.
  4. Stir in the grated zucchini until evenly combined.
  5. In a separate small bowl or directly in the mixing bowl, whisk together 1 ½ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon salt, and 1 teaspoon ground cinnamon.
  6. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula or wooden spoon until just combined. Avoid overmixing.
  7. Fold in optional ½ cup chopped nuts or chocolate chips if using.
  8. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  9. Bake for 50 to 60 minutes, starting to check at 50 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
  10. Let the bread cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not over-grate zucchini to avoid soggy bread; squeeze out excess moisture but leave some for moistness. Mix ingredients just until combined to prevent tough bread. Use brown sugar for moisture and flavor. Room temperature eggs blend better. Tent with foil if top browns too quickly. Let bread cool completely before slicing to prevent crumbling.
