  • ¾ cup heavy cream (180ml)
  • 34 ripe peaches, sliced thin
  • 1 tablespoon lemon juice
  • Optional: fresh mint leaves for garnish

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand. Press firmly into the bottom and about 1 inch up the sides of a 9-inch tart pan. Chill in the refrigerator for about 15 minutes.
  2. Make the filling: Beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy, about 2-3 minutes on medium speed.
  3. Whip the cream: In a separate bowl, whip cold heavy cream until stiff peaks form, about 4-5 minutes.
  4. Combine filling and whipped cream: Gently fold the whipped cream into the cream cheese mixture using a spatula, keeping the mixture airy.
  5. Assemble the tart: Spoon the filling evenly into the chilled crust and smooth the top. Arrange thin peach slices on top and drizzle with lemon juice.
  6. Chill to set: Refrigerate the tart for at least 3 hours or overnight.
  7. Serve and garnish: Garnish with fresh mint leaves if desired before serving.
