  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup rolled oats, 2 tablespoons ground flaxseed (if using), and a pinch of sea salt. Stir to distribute evenly.
  2. Add the wet ingredients: Spoon in 1/2 cup peanut butter, 1/3 cup honey, and 1/4 teaspoon vanilla extract. Distribute them a bit for easier mixing.
  3. Mix until combined: Stir with a spatula, pressing the mixture against the sides of the bowl to break up the peanut butter. Mix for about 30 seconds until it forms a cohesive, slightly sticky dough. If too dry, add a teaspoon of honey or water; if too wet, add a tablespoon more oats.
  4. Fold in the chocolate chips: Add 1/4 cup mini chocolate chips and fold gently until evenly distributed. Taste and adjust sweetness or saltiness as desired.
  5. Chill the mixture (optional but recommended): Refrigerate the bowl for 10-15 minutes to firm up the mixture for easier rolling.
  6. Roll into balls: Line a baking sheet or plate with parchment paper. Using your hands or a small cookie scoop, portion out about 1 tablespoon of mixture and roll into smooth balls. Place on parchment paper. You should get about 12-14 balls.
  7. Final chill: Refrigerate the rolled energy balls for at least 30 minutes to set. This helps them hold their shape and improves texture.

Notes

For easier rolling, lightly wet your hands before rolling to prevent sticking. The flavors deepen after a day or two in the fridge. If using protein powder, reduce oats to 3/4 cup and add an extra tablespoon of honey or a splash of milk.
