  • 1 ½ cups (135g) rolled oats
  • ⅓ cup (110g) honey
  • ½ cup (90g) chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon (5ml) vanilla extract
  • ¼ teaspoon salt
  • Optional add-ins: shredded coconut, chopped nuts, dried cranberries, or a scoop of protein powder

Instructions

  1. In a large mixing bowl, combine 1 cup creamy peanut butter, ⅓ cup honey, and 1 teaspoon vanilla extract. Stir until smooth and well combined.
  2. Add 1 ½ cups rolled oats, 2 tablespoons ground flaxseed, and ¼ teaspoon salt (if using). Stir until the mixture starts to come together.
  3. Fold in ½ cup chocolate chips and any other desired mix-ins until evenly distributed.
  4. Check the consistency: the mixture should hold together when pressed between your fingers. If too dry, add a tablespoon of honey or a splash of milk. If too sticky, add a tablespoon of oats.
  5. Roll the mixture into 1-inch balls (about 20-24 balls) and place on a parchment-lined baking sheet or plate.
  6. Refrigerate for at least 30 minutes to firm up. Serve chilled or at room temperature.

Notes

For best results, use room temperature peanut butter. If the mixture is too sticky, wet your hands slightly with water before rolling. Chilling the mixture for 10 minutes before rolling makes shaping easier. These balls taste even better after a day in the fridge as the flavors meld together.
