  • 1/4 cup honey (85 grams)
  • 1/3 cup chipotle BBQ sauce (80 ml)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon fresh lime juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easier cleanup.
  2. In a mixing bowl, combine honey, chipotle BBQ sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and lime juice if using. Whisk until smooth and well blended.
  3. Pat the chicken drumsticks dry with paper towels. Toss the drumsticks in the sauce mixture until evenly coated. Reserve a tablespoon or two of the sauce for basting.
  4. Arrange the drumsticks on the prepared baking sheet, spacing them out to avoid crowding. Pour any leftover sauce over the chicken.
  5. Roast in the oven for 30-35 minutes. Halfway through cooking (around 15 minutes), baste the chicken with the reserved sauce or pan juices. Optionally, flip each drumstick for even crispiness.
  6. Check for doneness; the internal temperature should reach 165°F (74°C). The skin should be golden brown with a slightly sticky glaze. If the sauce darkens too quickly, loosely tent the pan with foil.
  7. Remove the chicken from the oven and let it rest for 5 minutes before serving.

Pat chicken dry to ensure crispy skin. Do not overcrowd the pan to allow even roasting. Reserve some sauce for basting to keep drumsticks sticky and flavorful. Watch the glaze near the end to prevent burning; tent with foil if needed. Let chicken rest after baking for juiciness. For extra caramelization, broil for 2-3 minutes at the end but watch closely.
