  • 1 cup (240ml) milk (whole, 2%, or dairy-free alternatives like oat or almond milk)
  • 1 ½ cups (170g) shredded cheddar cheese
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and sauté for 2-3 minutes until soft and translucent.
  2. Add the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  3. Add the ground beef, crumble it into the pan, and cook for 5-7 minutes until browned and no longer pink. Season with salt, pepper, and Italian seasoning. Drain excess fat if needed.
  4. Stir in the tomato paste and Worcestershire sauce and cook for 1 minute to deepen flavors.
  5. Add the uncooked elbow macaroni and stir to coat with the beef mixture.
  6. Pour in the beef broth and stir gently to combine. Bring to a boil over medium-high heat.
  7. Reduce heat to medium-low, cover with a lid, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender but slightly firm. Add more broth or water if liquid evaporates too quickly.
  8. Lower heat to low and stir in the milk. Slowly add shredded cheddar cheese, stirring constantly until melted and creamy. Adjust seasoning with salt and pepper if needed.
