  • 1 cup fresh blueberries
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together 1 cup softened unsalted butter and 1 cup granulated sugar until light and fluffy (about 3-4 minutes).
  3. Add 1 large egg and 1 teaspoon vanilla extract; mix until just combined.
  4. In a separate bowl, whisk together 2 ½ cups all-purpose flour, ½ teaspoon baking powder, and ¼ teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Line a 9×13-inch baking sheet with parchment paper. Press the dough evenly into the pan, reaching the edges.
  7. Bake for 15-18 minutes or until edges are golden brown and center is set. Remove and let cool completely.
  8. In a medium bowl, beat 8 oz softened cream cheese until smooth.
  9. Slowly add ½ cup heavy cream while mixing on medium speed until soft peaks form.
  10. Mix in ¼ cup powdered sugar and 1 teaspoon vanilla extract until fully incorporated.
  11. Chill the cream mixture while the crust cools.
  12. Wash and dry the strawberries, blueberries, and raspberries thoroughly.
  13. Slice the strawberries thinly.
  14. Spread the cream cheese mixture evenly over the cooled sugar cookie crust using an offset spatula.
  15. Arrange sliced strawberries in horizontal stripes across the top, leaving spaces for white cream and blue berries.
  16. Fill a corner of the pizza with blueberries to represent the flag’s stars area.
  17. Use raspberries to add extra red stripes if desired.
  18. Garnish with fresh mint leaves if desired.
  19. Serve immediately or chill for up to 24 hours. For best texture, serve within 1-2 hours.
