These no-bake energy bites are made with simple, wholesome ingredients like oats, peanut butter, banana, and honey. They’re perfect for a quick snack, meal prep, or a healthy treat that tastes like a peanut butter cookie.

  • 1/2 cup creamy peanut butter
  • 1 medium ripe banana, mashed
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt (if peanut butter is unsalted)
  • 1/3 cup mini chocolate chips (optional)
  • 2 tablespoons ground flaxseed (optional)

Instructions

  1. Mash the banana in a large mixing bowl until mostly smooth with just a few tiny lumps.
  2. Add the peanut butter, honey, and vanilla extract. Stir until fully combined.
  3. Add the rolled oats, salt, ground flaxseed (if using), and chocolate chips (if using). Stir until evenly distributed. The mixture should be thick enough to hold together when pressed.
  4. Chill the mixture in the refrigerator for 15-20 minutes (optional but recommended for easier rolling).
  5. Using a small cookie scoop or tablespoon, scoop out portions and roll between your palms into 1-inch balls. Lightly dampen hands with water if mixture sticks.
  6. Place the rolled bites on a parchment-lined baking sheet or plate.
  7. Refrigerate for at least 30 minutes to set before eating.
  8. Store in an airtight container in the refrigerator for up to 7 days, or freeze for up to 3 months.

Notes

For best flavor, use a very ripe banana with brown spots. If the mixture is too dry, add a teaspoon of honey or a splash of milk. If too wet, add a tablespoon more oats. Chilling the mixture before rolling makes it easier to handle. These bites taste even better the next day as flavors meld.
