Easy Rainbow Veggie Bento Box with Hummus

A quick, colorful, and satisfying bento box filled with fresh vegetables and creamy hummus. Perfect for meal prep and busy mornings.

Ingredients

  • 1 medium red bell pepper, sliced into thin strips
  • 1 medium orange bell pepper, sliced into thin strips
  • 1 medium yellow bell pepper, sliced into thin strips
  • 1/2 English cucumber, cut into half-moons or sticks
  • 2 medium carrots, peeled and cut into matchsticks
  • 1 cup cherry tomatoes, halved
  • 1 cup snow peas, trimmed
  • 1/2 cup purple cabbage, thinly shredded
  • 1/2 to 3/4 cup hummus (classic or homemade)
  • Optional: olive oil, smoked paprika, pine nuts for hummus topping
  • 1 cup cooked quinoa or brown rice (optional)
  • Optional protein: grilled chicken, tofu, hard-boiled eggs, or roasted chickpeas
  • Fresh herbs (mint or cilantro) for garnish
  • Salt and pepper to taste

Instructions

  1. Wash and prep all vegetables: rinse, pat dry, cut bell peppers into thin strips, slice cucumber into half-moons, julienne carrots, halve cherry tomatoes, trim snow peas, shred purple cabbage.
  2. Prepare the hummus: stir store-bought hummus, add olive oil or water if too thick, spoon into bento compartment or ramekin, create a swirl on top.
  3. Layer vegetables by color: arrange red, orange, yellow bell peppers, green cucumber and snow peas, carrots, purple cabbage, and cherry tomatoes cut-side up for a rainbow gradient.
  4. Add base and protein: place quinoa or rice in largest compartment, fluff with fork, add protein on top or alongside.
  5. Garnish and season: sprinkle salt and pepper over vegetables, tuck fresh herb sprigs, drizzle olive oil and dust smoked paprika over hummus if desired.
  6. Seal and store: close lid tightly, refrigerate immediately if not eating right away.

Notes

Keep hummus separate until ready to eat to prevent soggy vegetables. Dry vegetables thoroughly after washing. Cut vegetables uniformly for best texture. Prep vegetables in batches on Sunday for quick assembly. This bento is best served cold or at room temperature.
