  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup fresh strawberries, sliced (optional)
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk (dairy-free milk optional)
  • 1 cup whipped topping, thawed (cool whip or homemade whipped cream)
  • 2 packets (6 oz each) blueberry or berry-flavored Jello mix
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup fresh blueberries (optional)

Instructions

  1. Prepare the Red Layer: In a large bowl, dissolve 2 packets of strawberry or cherry Jello in 2 cups boiling water. Stir well until completely dissolved. Add 1 cup cold water and mix. Pour half of this mixture into your 9×13 dish. Sprinkle sliced strawberries evenly over the top for some texture. Refrigerate for 30-40 minutes or until the layer is firm but slightly tacky.
  2. Make the White Layer: While the red layer chills, whisk together the instant vanilla pudding mix with 2 cups cold milk. Let it sit for 5 minutes to thicken. Gently fold in 1 cup of whipped topping until smooth and fluffy. Once the red layer is ready, spoon or carefully spread the white mixture evenly over it. Return the dish to the fridge for another 30 minutes to set.
  3. Prepare the Blue Layer: Repeat the Jello process for the blue layer: dissolve 2 packets of blueberry Jello in 2 cups boiling water, stir in 1 cup cold water. Pour this mixture gently over the white layer. Add fresh blueberries on top if you like. Chill for at least 2 hours, or until fully set.
  4. Serving: Once fully chilled, slice the Jello into squares using a sharp knife warmed under hot water for cleaner cuts. Serve chilled.

Notes

Let each layer chill until firm but slightly tacky before adding the next to prevent colors from bleeding. Use cold water to help gelatin set properly. Fold whipped topping gently into pudding to keep it airy. Fresh berries add texture but frozen berries must be thawed and drained to avoid watery layers.
