A quick and easy weeknight dinner featuring roasted chicken sausage, bell peppers, and onions seasoned with smoked paprika and cumin, served with warm tortillas.

Ingredients

  • 1.5 pounds chicken sausage (Andouille or mild Italian), sliced into half-moons
  • 3 large bell peppers (red, yellow, green mix), sliced into half-inch strips
  • 1 large yellow onion, sliced into wedges
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1 lime, cut into wedges
  • 1 small bunch cilantro, chopped
  • Flour or corn tortillas, warmed
  • Optional toppings: salsa, sour cream, guacamole, shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and slice bell peppers into half-inch strips. Slice onion into wedges, keeping the root end intact.
  3. Slice sausage links diagonally into half-moon shapes.
  4. Line a large rimmed sheet pan with parchment paper.
  5. Place peppers, onions, and sausage on the pan in a single layer.
  6. Drizzle with olive oil and sprinkle with smoked paprika, cumin, garlic powder, and chili powder.
  7. Toss ingredients to coat evenly.
  8. Bake for 20-25 minutes, stirring halfway through, until peppers are tender and sausage is crispy.
  9. Remove from oven, squeeze fresh lime juice over the top, and sprinkle with chopped cilantro.
  10. Serve immediately with warm tortillas and desired toppings.

Notes

Do not crowd the pan to ensure vegetables roast rather than steam. Use fresh lime juice for best flavor. For a vegetarian option, swap sausage for portobello mushrooms or halloumi. For gluten-free, use corn tortillas.
