These easy pinwheel sandwiches are a fun, nut-free twist on a classic. Made with just three ingredients, they’re perfect for lunchboxes, snacks, and parties.

  • 4 slices soft sandwich bread (white, brioche, or soft whole wheat)
  • 2 tablespoons sunbutter (sunflower seed butter), or as needed
  • 2 tablespoons jelly or jam (strawberry, grape, or raspberry), or as needed
  • Optional: 1 tablespoon cream cheese or butter, softened

Instructions

  1. Prepare the bread: Using a rolling pin, gently flatten each slice of bread until about 1/4-inch thick.
  2. Spread the filling: Lay flattened bread on a cutting board. Spread a thin, even layer of sunbutter over each slice, leaving a small border. Then spread a thin layer of jelly. If using cream cheese, spread it first.
  3. Roll it up: Starting from one short end, tightly roll each slice into a log. Place seam-side down.
  4. Wrap and chill: Wrap each roll tightly in plastic wrap or parchment paper. Refrigerate for at least 30 minutes (or up to overnight).
  5. Slice and serve: Unwrap rolls and slice into 1-inch thick pinwheels using a sharp serrated knife. Serve cold or at room temperature.

Notes

Chilling is essential for clean slices. Use soft, squishy bread for best results. Avoid overfilling to prevent sogginess. Make ahead and freeze uncut rolls for up to 2 months.
