Quick and easy turkey and cheddar pinwheel roll-ups perfect for lunchboxes, snacks, or appetizers. Made with simple ingredients and a creamy ranch-seasoned base, these spirals are a crowd-pleaser.

  • 4 large flour tortillas (10-inch burrito size)
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup shredded sharp cheddar cheese
  • 8 slices deli turkey breast
  • 1 tablespoon ranch seasoning mix
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder (optional)
  • Salt and black pepper to taste

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 30 minutes before starting. If forgotten, microwave on 50% power in 15-second intervals until soft but not melted.
  2. Make the cream cheese mixture: In a mixing bowl, combine softened cream cheese, shredded cheddar, ranch seasoning, lemon juice, garlic powder, and a pinch of black pepper. Stir until well combined. Taste and adjust seasoning.
  3. Prep your tortillas: Lay one tortilla flat on a cutting board. If cold, let sit at room temperature for 10 minutes.
  4. Spread the mixture: Using a spatula, spread a generous, even layer of cream cheese mixture over the entire surface of the tortilla, leaving about a half-inch border around the edges.
  5. Layer the turkey: Place 2 slices of deli turkey flat on top of the cream cheese mixture, overlapping slightly to cover the whole tortilla. Press down gently.
  6. Roll it tight: Starting from one edge, roll the tortilla as tightly as possible without tearing. Use fingers to keep filling snug. Press down lightly to seal the seam.
  7. Wrap and chill: Place rolled tortilla seam-side down on plastic wrap. Wrap tightly, twisting ends like a candy wrapper. Repeat with remaining tortillas. Refrigerate for at least 30 minutes (1 hour is better, overnight is ideal).
  8. Slice and serve: Unwrap a chilled roll. Using a sharp serrated knife, slice off uneven ends (cook’s snack). Slice into 1/2-inch to 3/4-inch pinwheels using a gentle sawing motion. Arrange on a plate or pack into lunchboxes.

Notes

Chill time is crucial for clean slicing. Use a serrated knife to avoid squishing. Wipe knife between slices for neat presentation. Make ahead and freeze uncut rolls for up to 2 months. These taste even better the next day.
