  • 8 ounces cream cheese, softened
  • 1/4 cup finely chopped pineapple chunks (fresh or canned, drained)
  • 1/2 cup shredded sharp cheddar cheese
  • 12 slices thin-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice each jalapeño in half lengthwise and carefully remove seeds and membranes.
  3. In a mixing bowl, combine softened cream cheese, chopped pineapple, shredded cheddar, garlic powder, onion powder, salt, pepper, and smoked paprika if using. Stir until smooth with visible pineapple bits.
  4. Fill each jalapeño half with the cream cheese mixture using a teaspoon or small scoop.
  5. Wrap each stuffed jalapeño half with one slice of bacon, securing the filling. Place seam-side down on the baking sheet.
  6. Bake for 20-25 minutes until bacon is crispy and jalapeños are tender, rotating the pan halfway through if needed.
  7. Remove from oven and let rest for 5 minutes before serving.

Use thin-cut bacon for best crispiness. Rotate the baking sheet halfway through cooking to ensure even bacon crisping. Let poppers rest after baking to allow filling to set. For less heat, remove all seeds and membranes from jalapeños. Use a wire rack on the baking sheet for extra crispy bacon. Avoid microwaving leftovers to keep bacon crispy.
