  • 2 medium fresh peaches, peeled and chopped
  • 1/4 cup bourbon (60 ml)
  • 1 cup ketchup (240 ml)
  • 1/4 cup brown sugar (50 g)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (15 ml)

Instructions

  1. Prepare the peaches by peeling and chopping about two medium peaches. To peel easily, blanch in boiling water for 30 seconds, then plunge into ice water.
  2. Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add chopped peaches and cook for 5-7 minutes, stirring occasionally, until softened and caramelized.
  3. Pour in 1/4 cup bourbon carefully. Stir and let simmer for 2 minutes to reduce slightly and mellow the alcohol.
  4. Stir in 1 cup ketchup, 1/4 cup brown sugar, and 2 tablespoons apple cider vinegar. Whisk to combine evenly.
  5. Add 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well and reduce heat to low.
  6. Simmer the sauce uncovered for 15 minutes, stirring occasionally, until thickened and flavors melded.
  7. Remove from heat and puree the sauce with an immersion blender until smooth (or use a regular blender).
  8. Taste and adjust seasoning: add more vinegar for brightness, honey for sweetness, or simmer longer for thicker sauce.
  9. Let the sauce cool slightly before brushing generously over grilled chicken. Marinate chicken for at least 30 minutes before grilling.

Notes

If short on time, skip blending for a chunkier sauce. Use smoked paprika for smoky flavor without a smoker. Apply sauce in last 5 minutes of grilling to avoid burning sugars. Sauce keeps up to 1 week refrigerated and up to 3 months frozen.
