  • 3 tablespoons sriracha sauce

Instructions

  1. In a large bowl, toss the chicken cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Mix well to coat evenly. Let it sit for 10-15 minutes to absorb the flavors.
  2. In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, sesame oil, and minced garlic until smooth. Set aside.
  3. Carefully thread the chicken pieces onto the skewers, leaving a little space between each piece for even cooking (about 5-6 pieces per skewer).
  4. Preheat the grill or grill pan to medium-high heat (about 400°F). If using a pan, lightly oil it to prevent sticking.
  5. Place the skewers on the grill and cook for 4-5 minutes per side, turning carefully with tongs until grill marks form and chicken starts to caramelize.
  6. Brush a generous layer of the honey sriracha glaze on all sides of the chicken. Be mindful of flare-ups if on an open flame.
  7. Continue grilling for another 2-3 minutes per side, brushing with more glaze halfway through, until chicken is cooked through (internal temperature 165°F) and glaze is sticky and slightly charred.
  8. Remove the skewers from the grill and let them rest for a few minutes.
  9. Sprinkle with chopped green onions and sesame seeds. Serve with lime wedges.
