Flavorful Grilled Shrimp Cocktail Recipe with Easy Chipotle Lime Sauce

A quick and easy grilled shrimp cocktail with a smoky, tangy chipotle-lime sauce that’s perfect for weeknight dinners or entertaining guests.

  • 1 pound (450g) large shrimp, peeled and deveined (tail-on for presentation, if you like)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lime (about 2 tablespoons)
  • 1/2 cup (120ml) mayonnaise
  • 12 chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce (from the chipotle peppers can)
  • Juice of 1 lime (freshly squeezed)
  • 1 clove garlic, minced
  • 1 teaspoon honey or agave syrup
  • Salt, to taste
  • Optional garnishes: chopped fresh cilantro, lime wedges, thinly sliced red onion or green onion

Instructions

  1. In a large bowl, combine olive oil, smoked paprika, ground cumin, garlic powder, salt, black pepper, and lime juice.
  2. Toss the peeled and deveined shrimp in this mixture until evenly coated. Cover and refrigerate for 15-20 minutes.
  3. While the shrimp marinates, add mayonnaise, chipotle peppers, adobo sauce, minced garlic, lime juice, honey, and a pinch of salt to a blender or food processor.
  4. Blend until smooth and creamy. Taste and adjust salt or lime juice as needed. Chill in the fridge until ready to serve.
  5. Preheat the grill or grill pan to medium-high heat, around 400°F (205°C).
  6. Thread shrimp onto skewers if desired to prevent them from falling through the grate.
  7. Grill shrimp for about 2-3 minutes per side, until opaque and slightly charred.
  8. Arrange shrimp on a platter or in individual cocktail glasses.
  9. Spoon the chipotle-lime sauce over the top or serve it on the side for dipping.
  10. Garnish with chopped cilantro and lime wedges.

Notes

Do not marinate shrimp longer than 20 minutes to avoid mushy texture. Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Avoid overcrowding the grill for even cooking. Use fresh lime juice for best flavor. The sauce tastes better after chilling for a couple of hours. Leftovers keep well in the fridge for up to 2 days. Warm gently to reheat or serve cold in salads.
