Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup sour cream (full-fat or Greek yogurt)
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 4 oz blue cheese, crumbled
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • ½ cup sundried tomatoes, finely chopped (packed in oil preferred)
  • 2 tablespoons fresh basil, chopped (or 1 teaspoon dried basil)
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • ½ cup diced cucumber
  • ¼ cup sliced green onions
  • ½ cup crumbled feta cheese (optional)
  • Fresh parsley or dill for garnish (optional)
  • Chips, crackers, or fresh veggies for serving (optional)

Instructions

  1. Prepare the Base Layer (10 minutes): In a medium bowl, combine the softened cream cheese and sour cream. Add garlic powder, salt, and pepper. Use a hand mixer or sturdy spoon to blend until smooth and creamy. Taste and adjust seasoning as needed.
  2. Mix the Blue Cheese Layer (5 minutes): In another bowl, gently fold the crumbled blue cheese with mayonnaise and lemon juice. Keep some texture; do not overmix.
  3. Chop Sundried Tomatoes and Herbs (5 minutes): Finely chop the sundried tomatoes and fresh basil. Toss them with olive oil to create a flavorful, moist topping.
  4. Assemble the Dip (10 minutes): In your serving dish, spread the cream cheese base evenly. Carefully spoon and spread the blue cheese mixture over it. Next, layer the sundried tomato and basil mixture evenly on top.
  5. Add Fresh Veggies and Garnish (5 minutes): Sprinkle halved cherry tomatoes, diced cucumber, and sliced green onions over the top. If using, crumble feta cheese across the surface. Finish with fresh parsley or dill for extra flavor.
  6. Chill Before Serving (at least 30 minutes): Refrigerate the dip to allow flavors to meld and layers to firm up.

Notes

Use milder blue cheese varieties to keep the dip approachable. Let cream cheese and sour cream come to room temperature for easier mixing. Chill dip for at least 30 minutes before serving to meld flavors and firm layers. Finely chop sundried tomatoes for even layering. Variations include vegan substitutions, low-carb options, and adding heat with jalapeños or hot sauce.
