Ingredients

Scale
  • 1 cup all-purpose flour (or 1:1 gluten-free blend)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 2 large eggs, room temperature
  • 1/2 cup plain non-fat or low-fat Greek yogurt
  • 1/2 cup pumpkin puree (100% pure, not pie filling)
  • 1/2 cup granulated or brown sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a separate medium bowl, whisk eggs until beaten. Add Greek yogurt, pumpkin puree, vanilla extract, and sugar; whisk until smooth and creamy.
  4. Pour wet ingredients into dry ingredients. Gently fold together with a spatula until just combined. Do not overmix; batter should be thick and lumpy.
  5. Divide batter evenly among muffin cups, filling each about 2/3 full.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to ensure fluffy texture. Ensure eggs and yogurt are at room temperature. If pumpkin puree is watery, drain it first. For gluten-free, use a 1:1 blend. For vegan, use flax eggs and coconut yogurt.
