A quick and easy vibrant appetizer featuring fresh mozzarella, cherry tomatoes, and basil, drizzled with a homemade balsamic glaze. Perfect for any occasion and a true crowd-pleaser.

  • 8 oz fresh mozzarella balls (bocconcini or ciliegine)
  • 1 pint cherry tomatoes (about 250 g)
  • 20 fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • ½ cup (120 ml) balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Salt and freshly cracked black pepper to taste
  • About 12 wooden or bamboo skewers

Instructions

  1. Prepare the balsamic glaze: Pour ½ cup (120 ml) balsamic vinegar into a small saucepan over medium heat. Add 1 tablespoon honey or brown sugar and stir to combine. Simmer gently for 8-10 minutes, stirring occasionally, until thickened to a syrupy consistency. Remove from heat and let cool.
  2. Prepare the ingredients: Rinse cherry tomatoes and basil leaves, then pat dry. Halve large cherry tomatoes if needed. Drain and pat dry mozzarella balls.
  3. Assemble the skewers: Thread one cherry tomato, one basil leaf (folded if large), and one mozzarella ball onto each skewer. Repeat the pattern once more or until nearly full, leaving about an inch at the handle end. Makes about 12 skewers.
  4. Toss the skewers: Place skewers on a serving platter. Drizzle with 2 tablespoons extra virgin olive oil, sprinkle with salt and freshly cracked black pepper. Gently toss to coat evenly without bruising basil.
  5. Drizzle with balsamic glaze: Spoon or squeeze the cooled balsamic glaze over the skewers just before serving.
  6. Final touches: Garnish with extra basil leaves if desired. Serve immediately or refrigerate up to 1 hour before serving. Add balsamic glaze just before serving if chilled.

Notes

Soak wooden or bamboo skewers in water for 10 minutes before grilling or broiling to prevent burning. Pat mozzarella dry to avoid sogginess. Make balsamic glaze gently over low heat to prevent bitterness. Add balsamic glaze just before serving if chilling skewers.
