Fresh Cowboy Caviar Recipe with Mango Avocado and Zesty Lime Dressing

A vibrant and fresh twist on classic cowboy caviar featuring sweet mango, creamy avocado, and a zesty lime dressing. Perfect as a healthy snack or crowd-pleasing side.

  • 1 can (15 oz/425 g) black beans, drained and rinsed
  • 1 cup (150 g) sweet corn kernels, fresh or frozen and thawed
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 medium red bell pepper, diced
  • ½ small red onion, finely chopped
  • 1 large fresh mango, peeled and diced
  • 1 large avocado, diced
  • ¼ cup fresh cilantro, chopped (optional)
  • 1 small jalapeño, seeded and finely minced
  • Juice of 2 limes (about 3 tablespoons/45 ml)
  • 2 tablespoons (30 ml) olive oil, extra virgin
  • 1 tablespoon (15 ml) honey or agave
  • 1 garlic clove, minced
  • 1 teaspoon (5 ml) ground cumin
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse and drain the black beans and corn thoroughly. Dice the red bell pepper, halve the cherry tomatoes, finely chop the red onion, and mince the jalapeño (remove seeds if you prefer less heat). Peel and dice the mango into bite-sized pieces, and dice the avocado last to keep it from browning.
  2. In a small bowl or jar, combine lime juice, olive oil, honey, minced garlic, ground cumin, salt, and pepper. Whisk or shake vigorously until emulsified and smooth. Adjust seasoning as needed.
  3. In a large mixing bowl, gently toss together the black beans, corn, cherry tomatoes, red bell pepper, red onion, jalapeño, and cilantro if using. Pour the dressing over the mixture and stir gently to coat evenly.
  4. Fold in the diced mango and avocado carefully to retain their shape and avoid mushiness.
  5. Let the cowboy caviar sit for 10-15 minutes before serving to allow flavors to marry. Serve chilled or at room temperature.

Notes

Add avocado just before serving to prevent browning. If the salad looks dry after resting, add a splash of fresh lime juice. Gently fold avocado and mango to avoid mushiness. Rinse canned beans well to reduce sodium and canned taste. Fresh lime juice is preferred for best flavor.
