Instructions

  1. Wash and peel cucumbers if desired, then slice into thin half-moons. Place in a colander, sprinkle generously with salt, and let sit for 15-20 minutes to draw out moisture.
  2. While cucumbers salt, slice tomatoes into wedges and remove hard cores. Scoop out seeds if tomatoes are very juicy.
  3. Rinse salted cucumbers briefly under cold water to remove excess salt and pat dry with paper towels.
  4. In a large mixing bowl, combine drained cucumbers, tomato wedges, and sliced red onion.
  5. Add crumbled feta cheese and chopped fresh dill to the bowl.
  6. Drizzle with extra virgin olive oil and red wine vinegar. Season with black pepper and a pinch of salt if needed.
  7. Gently toss ingredients together to coat without crushing them.
