A fresh and simple salad combining juicy nectarines, creamy burrata, savory prosciutto, and fragrant basil, perfect for warm evenings and impromptu gatherings.

Ingredients

  • 3 medium fresh nectarines, ripe but firm, sliced into wedges
  • 8 ounces burrata cheese, fresh and whole
  • 4 ounces prosciutto, thinly sliced
  • About 15 fresh basil leaves, torn by hand
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: drizzle of aged balsamic vinegar or sprinkle of toasted pine nuts

Instructions

  1. Wash and slice nectarines into 8 wedges each, about 1/2-inch thick.
  2. Tear basil leaves by hand into bite-sized pieces and set aside.
  3. Arrange nectarine wedges in a single layer on a serving plate.
  4. Place the whole burrata cheese in the center of the nectarines.
  5. Drape prosciutto slices around and over the nectarines.
  6. Scatter torn basil leaves evenly over the salad.
  7. Whisk together extra virgin olive oil, fresh lemon juice, sea salt, and freshly ground black pepper in a small bowl until emulsified.
  8. Drizzle the dressing evenly over the salad just before serving.
  9. Optionally, add a drizzle of aged balsamic vinegar or sprinkle toasted pine nuts for extra texture and sweetness.

Notes

Tear basil leaves by hand to release oils and enhance aroma. Use perfectly ripe nectarines with slight give for best sweetness. Handle burrata gently and place whole to preserve creamy center. Dress salad just before serving to avoid sogginess. Optional balsamic vinegar or toasted pine nuts add extra flavor and texture.
