A quick and easy summer appetizer featuring the refreshing combination of juicy watermelon, tangy feta cheese, and optional fresh mint on skewers. Perfect for gatherings and last-minute snacks.

  • 4 cups seedless watermelon, cut into 1-inch cubes
  • 6 ounces block feta cheese, cut into cubes
  • Fresh mint leaves (optional)
  • Optional: balsamic glaze for drizzling
  • Optional: freshly cracked black pepper

Instructions

  1. Cut about 4 cups (600 grams) of seedless watermelon into 1-inch cubes. Pat dry with paper towels if too juicy.
  2. Cut a 6-ounce (170 grams) block of feta cheese into cubes roughly the same size as the watermelon pieces.
  3. Rinse a handful of fresh mint leaves and pat dry. Leave whole, tear slightly, or chop finely as preferred.
  4. Assemble skewers by threading one cube of watermelon, followed by a cube of feta, then one or two mint leaves. Repeat until all ingredients are used (about 12 skewers).
  5. Arrange skewers on a serving platter. Optionally drizzle with balsamic glaze or sprinkle with freshly cracked black pepper.
  6. Serve immediately or chill for up to 30 minutes before serving.

Notes

If feta slides off skewers, cut cheese smaller or press skewer through watermelon for better grip. Chill watermelon before assembling for a refreshing bite. Assemble close to serving time to avoid sogginess. For dairy-free, substitute feta with marinated tofu or vegan cheese. Optional additions include balsamic glaze, chili flakes, or black pepper.
