Fresh Watermelon Mint Cucumber Popsicles with Lime Zest

A refreshingly cool summer treat combining sweet watermelon, cooling cucumber, fresh mint, and a zing of lime zest. Easy to make and perfect for hot days.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 medium cucumber, peeled and chopped
  • 1/4 cup fresh mint leaves, loosely packed, washed and roughly chopped
  • Zest of 1 lime
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 to 2 tablespoons honey or agave syrup (optional)
  • 1/4 cup water

Instructions

  1. Cut about 4 cups (600 g) of seedless watermelon into cubes and peel and chop 1 medium cucumber (about 150 g).
  2. In a blender or food processor, combine watermelon cubes, chopped cucumber, fresh mint leaves, and water. Blend until smooth but slightly textured, about 30 seconds.
  3. Stir in lime zest and lime juice, along with honey or agave syrup if using. Blend again for 10 seconds to combine. Taste and adjust sweetness if needed.
  4. Pour the mixture into popsicle molds, leaving about 1/2 inch (1.25 cm) gap at the top for expansion. Tap molds gently to remove air bubbles.
  5. Insert sticks into molds and freeze for at least 4 hours or preferably overnight until solid.
  6. To unmold, run warm water briefly over the outside of the molds and gently pull on the sticks. Serve immediately or store in a freezer-safe container for up to 2 weeks.

Notes

Do not overblend to keep some texture; use ripe watermelon for natural sweetness; add sweetener last after tasting; run warm water on molds to unmold popsicles; store in airtight container to prevent freezer burn; variations include adding berries, swapping herbs, or adding alcohol for adults.
