  • 1 large yellow onion, diced (about 1.5 cups)
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1.5 pounds lean ground turkey (93% lean)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • ½ teaspoon cayenne pepper (optional)
  • 1 can (15 oz) fire-roasted diced tomatoes (undrained)
  • 1 can (8 oz) tomato sauce
  • 1 cup low-sodium chicken broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Shredded cheddar cheese (optional, for serving)
  • Sour cream or Greek yogurt (optional, for serving)
  • Diced avocado (optional, for serving)

Instructions

  1. Prep your ingredients: Dice the onion, bell pepper, and jalapeño. Mince the garlic. Drain and rinse both cans of beans. Open the tomatoes and tomato sauce. Measure out all your spices into a small bowl.
  2. Heat the oil: Place your Dutch oven over medium-high heat. Add the olive oil and let it shimmer, about 30 seconds.
  3. Sauté the aromatics: Add the diced onion, bell pepper, and jalapeño. Cook, stirring occasionally, until the onion turns translucent and the peppers soften, about 4-5 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Brown the turkey: Add the ground turkey to the pot. Break it up with a wooden spoon into small crumbles. Season with salt and pepper. Let it cook undisturbed for 2 minutes to get a nice sear, then start breaking it apart. Cook until no pink remains and the turkey starts to brown slightly, about 6-7 minutes.
  5. Add the spices: Sprinkle the chili powder, smoked paprika, cumin, oregano, and cayenne (if using) over the turkey mixture. Stir constantly for about 60 seconds to toast the spices.
  6. Add the tomatoes and broth: Pour in the fire-roasted diced tomatoes (with their juices), tomato sauce, and chicken broth. Stir well, scraping up any browned bits from the bottom of the pot.
  7. Add the beans and simmer: Stir in the drained kidney beans and black beans. Bring the chili to a gentle boil, then reduce the heat to medium-low. Let it simmer uncovered for 10-12 minutes, stirring occasionally. If it looks too thick, add a splash more broth or water.
  8. Finish with lime juice: Remove the pot from heat. Squeeze the juice of one lime over the chili and stir. Taste and adjust seasoning.
  9. Rest and serve: Let the chili sit for 5 minutes before serving. Ladle into bowls and top with your favorite garnishes.

Notes

Don’t skip the lime juice—it brightens the chili and balances the smoky richness. For a thicker chili, mash half a can of beans before adding. This chili tastes even better the next day as flavors meld. To freeze, cool completely and store in airtight containers for up to 3 months.
