These healthy blueberry lemon protein muffins are quick, easy, and made entirely in a blender. Packed with protein from Greek yogurt and protein powder, they’re tender, moist, and perfect for meal prep.

  • 1 ½ cups (150g) rolled oats
  • 1 cup (240g) Greek yogurt (full-fat or 2%)
  • 2 large eggs
  • ⅓ cup (80ml) honey or maple syrup
  • 1 teaspoon vanilla extract
  • Zest from 1 large lemon
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1 cup (140g) frozen blueberries
  • Optional: ½ cup powdered sugar + 1-2 tablespoons fresh lemon juice for glaze

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray generously with nonstick spray.
  2. Add the rolled oats to your blender and blend on high for about 30 seconds until they turn into a fine flour.
  3. Add the Greek yogurt, eggs, honey, vanilla, lemon zest, lemon juice, baking powder, baking soda, salt, and protein powder to the blender. Blend on high for 45-60 seconds until smooth, scraping down sides if needed.
  4. Add the frozen blueberries and pulse 3-4 times until broken into small pieces and distributed throughout the batter. Do not over-pulse.
  5. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  6. Bake for 18-22 minutes, until tops are golden brown and spring back when lightly touched. A toothpick inserted into the center should come out clean or with a few moist crumbs.
  7. Cool in the pan for 5 minutes, then transfer to a wire cooling rack to cool completely. If using glaze, drizzle over cooled muffins.

Notes

Use frozen blueberries for best results; they stay intact and prevent purple batter. Let batter rest 5 minutes before baking for more tender muffins. Rotate pan halfway through baking for even browning. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
