  • 1 cup rolled oats (old-fashioned)
  • 2 large eggs, lightly beaten
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1/2 cup milk (any kind)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar (packed)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan with cooking spray or oil. Optionally line with parchment paper, leaving overhang for easy removal.
  2. Finely dice the onion and mince the garlic. Set aside.
  3. In a small bowl, combine ketchup, brown sugar, apple cider vinegar, and garlic powder to make the glaze. Stir until smooth and set aside.
  4. In a large mixing bowl, whisk together eggs, milk, and Worcestershire sauce until well combined and slightly frothy.
  5. Stir in rolled oats, salt, pepper, thyme, and smoked paprika. Let the mixture sit for about 5 minutes to allow the oats to absorb some liquid.
  6. Add ground turkey, diced onion, and minced garlic to the bowl. Using your hands, gently mix everything together until just combined. Do not overmix.
  7. Transfer the mixture to the prepared loaf pan. Press it in gently, removing any air pockets. Shape the top so it is slightly rounded in the center.
  8. Spread about half of the glaze over the top of the meatloaf. Reserve the remaining glaze for later.
  9. Bake for 40 minutes. Remove from the oven and spread the remaining glaze on top. Return to the oven and bake for another 5-10 minutes.
  10. Check the internal temperature with a meat thermometer. The meatloaf is done when it reaches 165°F (74°C) in the center.
  11. Let the meatloaf rest in the pan for at least 10 minutes before slicing. This allows the juices to redistribute.
  12. Slice and serve warm.
