  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 3 tbsp coconut aminos or soy sauce
  • 1 tbsp rice vinegar
  • 4 cloves garlic, minced
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 1/3 cup honey
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp red pepper flakes
  • 1 tbsp toasted sesame seeds
  • 2 stalks green onions, sliced

Instructions

  1. Soak bamboo skewers in water for at least 30 minutes to prevent burning.
  2. Pat chicken thighs dry with paper towels and cut into uniform 1-inch cubes.
  3. In a medium bowl, whisk together coconut aminos (or soy sauce), rice vinegar, minced garlic, ground ginger, and black pepper to create the marinade.
  4. Add chicken cubes to the marinade, toss to coat, and let sit at room temperature for 15 minutes (or up to 30 minutes).
  5. Thread the marinated chicken onto the soaked skewers, leaving small gaps between pieces.
  6. In a small saucepan over low heat, combine honey, soy sauce, sesame oil, and red pepper flakes. Warm gently until fluid, then set aside to cool slightly.
  7. Preheat grill to medium-high heat (400°F-450°F). Clean and oil the grates.
  8. Place skewers on the grill and do not move for 3-4 minutes to allow charring.
  9. Flip skewers, baste generously with the honey garlic glaze, flip again, and baste once more.
  10. Grill until chicken reaches an internal temperature of 165°F and glaze is caramelized, approximately 12-15 minutes total.
  11. Remove from grill and let rest for a few minutes.
  12. Sprinkle with toasted sesame seeds and sliced green onions before serving.

Notes

Chicken thighs are recommended over breasts to maintain juiciness. Do not over-marinate as the acid can make the texture mushy. Soak wooden skewers thoroughly to prevent burning. The glaze contains sugar and can burn easily, so apply towards the end of cooking. For a spicy version, add more red pepper flakes or sriracha.
