These Kid-Approved Breakfast Egg Muffins are fluffy, packed with cheese and veggies, and perfect for busy mornings. Make them once for a week of grab-and-go breakfasts that even picky eaters will love.

  • 1/4 cup milk (whole milk preferred, but 2% or oat milk works)
  • 1 tablespoon cornstarch
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup diced onion (yellow or white, finely chopped)
  • 1/2 cup cooked broccoli florets (finely chopped)
  • 4 slices cooked bacon, crumbled (or 1/2 cup diced ham or cooked sausage)
  • Non-stick cooking spray (or butter for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle of the oven. Generously spray a 12-cup standard muffin tin with non-stick cooking spray.
  2. If using bacon, cook until crispy, let cool, then crumble. If using sausage, cook and break into small pieces. If using ham, dice it. Set aside.
  3. Dice bell peppers and onion into small, uniform pieces (about pea-sized). If using fresh broccoli, steam until just tender, then chop fine. If using frozen broccoli, thaw and squeeze dry with a paper towel.
  4. In a large mixing bowl, crack 8 eggs. Add milk, cornstarch, salt, pepper, and garlic powder. Whisk vigorously for about 30 seconds until smooth and slightly frothy, ensuring cornstarch is fully dissolved.
  5. Stir in shredded cheese, diced peppers, onion, broccoli, and cooked meat. Mix until evenly distributed.
  6. Use a 1/4 cup measuring cup or ladle to divide the egg mixture evenly among the 12 muffin cups, filling each about 3/4 full.
  7. Bake for 15-18 minutes. Start checking at 15 minutes. Muffins are done when edges are golden brown and centers are set—they should spring back when gently pressed, and a toothpick inserted in the center should come out clean.
  8. Let muffins cool in the pan for 5 minutes. Run a butter knife around the edges of each muffin and gently lift them out. Transfer to a cooling rack.

Notes

Don’t overmix the eggs—whisk just until smooth. Use room temperature eggs if possible for even baking. Watch moisture levels: always squeeze thawed frozen veggies and cook mushrooms before adding. Don’t overbake; muffins continue to cook after removal. Let cool completely before storing to prevent sogginess. For picky eaters, dice fillings very finely. The flavors improve after a day or two.
