  • 16 ounces (452g) full-fat cream cheese, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1 cup (245g) canned pumpkin purée
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on two long sides. Lightly spray with non-stick cooking spray.
  2. In a food processor, combine pecans, flour, brown sugar, and salt. Pulse until pecans are finely ground and mixture resembles coarse sand. Add cold butter cubes and pulse until mixture looks like wet sand and holds together when pinched.
  3. Pour crust mixture into prepared pan. Press firmly and evenly into the bottom using a flat measuring cup or glass. Bake for 15 minutes until lightly golden. Set aside to cool slightly.
  4. In a large bowl, beat softened cream cheese with an electric mixer on medium speed until smooth and fluffy, about 2 minutes. Add granulated sugar and beat until combined. Add pumpkin purée, vanilla, pumpkin pie spice, and cinnamon; beat on low until just combined.
