  • 3 oz goat cheese log
  • 2 oz aged gouda or manchego
  • 4 oz prosciutto
  • 2 oz salami (optional)
  • 1 cup fresh grapes (red or green)
  • 1 apple or pear (sliced thin)
  • 1/2 cup dried apricots or figs
  • 1/2 cup cherry tomatoes (optional)
  • 1/4 cup almonds or walnuts
  • 1/4 cup whole-grain crackers or rice crackers
  • 1/4 cup sliced baguette (optional)
  • 2 tbsp honey or fig jam
  • 1 tbsp fresh rosemary or thyme (for garnish)
  • Flaky sea salt (to taste)

Instructions

  1. Prep the ingredients (5 minutes): Wash and dry the grapes and cherry tomatoes. Slice the apple or pear into thin wedges and toss with a squeeze of lemon juice to keep them from browning. Slice the baguette into thin rounds if using. Pat the prosciutto dry with a paper towel if it looks wet.
  2. Set up the cheese (3 minutes): Place the brie on one corner of the board. Leave it whole or cut a few wedges. Place the goat cheese log next to it, and slice the aged gouda or manchego into thin triangles. Arrange them so they’re not touching.
  3. Add the protein (2 minutes): Fold the prosciutto slices into loose ribbons or waves and place them near the brie. If using salami, fold the slices in half and arrange them in a small pile.
  4. Fill in with fruits and vegetables (3 minutes): Scatter the grapes and cherry tomatoes in small clusters around the board. Tuck the dried apricots or figs between the cheese and meat. Place the apple or pear slices in a fan shape near the edge.
  5. Add the crunch (2 minutes): Place the crackers and baguette slices in a small pile or line them along one side of the board. Sprinkle the almonds or walnuts in the gaps.
  6. Finish with extras (2 minutes): Put the honey or fig jam in a small bowl and place it on the board. Sprinkle a pinch of flaky sea salt over the tomatoes and brie. Garnish with a sprig of fresh rosemary or thyme.
  7. Serve immediately: Place the board in the center of the table with two small plates and napkins. Light a candle, pour some wine, and enjoy your date night.

Notes

Let the brie and goat cheese sit at room temperature for 20-30 minutes before serving for best flavor. If the brie is too firm to spread, let it sit out longer. For a vegetarian version, skip the prosciutto and salami and add roasted red peppers, marinated artichoke hearts, or hummus. To keep apple slices from browning, toss with lemon juice. This board is best enjoyed within 30 minutes of assembly.
