  • 1/2 cup unsalted butter, cut into cubes
  • 1/2 cup pure maple syrup (Grade A dark amber preferred)
  • 1/4 cup packed light brown sugar
  • 2 teaspoons ground cinnamon (Saigon cinnamon preferred)
  • 1 teaspoon vanilla extract (pure)
  • 1/2 teaspoon salt (flaky sea salt for finishing, or table salt for glaze)
  • 1/2 teaspoon baking soda
  • 1 cup raw pecans or walnuts (optional)
  • 1 cup dried cranberries or chopped dried apples (optional)

Instructions

  1. Preheat oven to 250°F (120°C). Line a large rimmed baking sheet with parchment paper.
  2. Pour 9 cups Corn Chex into a large mixing bowl. If using nuts, add them now and gently shake to distribute.
  3. In a small saucepan over medium heat, melt 1/2 cup unsalted butter. Add 1/2 cup maple syrup, 1/4 cup brown sugar, 2 teaspoons cinnamon, and 1/2 teaspoon salt. Whisk constantly until sugar dissolves and mixture is smooth, about 2 minutes.
  4. Remove saucepan from heat. Stir in 1 teaspoon vanilla extract and 1/2 teaspoon baking soda. The mixture will foam; whisk until foam subsides, about 10 seconds.
  5. Pour hot glaze over cereal mixture. Use a rubber spatula to fold gently but thoroughly until every piece is evenly coated, about 2 minutes.
  6. Spread coated cereal onto prepared baking sheet in an even layer. Do not add dried fruit yet.
  7. Bake for 30 minutes, stirring every 10 minutes. At 10 minutes, flip gently; at 20 minutes, stir again.
  8. Let mix cool completely on baking sheet, about 20-30 minutes. Once cool, transfer to a large bowl and toss in dried cranberries or apples if using.

Notes

Don’t skip the baking soda—it helps the glaze coat evenly. Bake at 250°F for the full 30 minutes for best crunch. Stir from the edges to prevent burning. Let cool completely before storing to maintain crunchiness. For a crowd, double the batch and use two baking sheets.
