Ingredients

  • 2 cups all-purpose flour (250g)
  • ½ cup unsweetened cocoa powder (45g)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup granulated sugar (150g)
  • ⅓ cup vegetable oil (80ml)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 ½ cups grated zucchini (about 2 medium zucchinis), squeezed dry
  • 1 cup semi-sweet or dark chocolate chips (170g)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan or line it with parchment paper.
  2. Grate the zucchini using a box grater or food processor. Press the shreds between paper towels or a clean kitchen towel to remove excess moisture.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until evenly combined.
  4. In another bowl, beat the sugar and vegetable oil until well mixed. Add eggs and vanilla extract, whisking until smooth.
  5. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix.
  6. Fold in the grated zucchini and chocolate chips evenly.
  7. Pour batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs attached. If the top browns too fast, loosely cover with foil halfway through baking.
  9. Cool the loaf in the pan for 15 minutes, then transfer to a wire rack to cool completely.
