  • 2 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed

  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (for gluten-free, use 1:1 gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • For the streusel:
  • 1/4 cup brown sugar, packed
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan with butter or non-stick spray and set aside.
  2. Prepare the streusel topping: In a small bowl, combine 1/4 cup brown sugar, 1/4 cup flour, and 1 teaspoon cinnamon. Add cold cubed butter and mix with fingers or pastry cutter until coarse crumbs form. Chill in the fridge.
  3. In a large bowl, mash the bananas until smooth but slightly chunky. Add Greek yogurt, eggs, granulated sugar, brown sugar, melted butter, and vanilla extract. Beat until creamy and well combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet banana mixture gently until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Sprinkle the streusel topping evenly over the batter.
  8. Bake for 55-65 minutes, checking at 55 minutes with a toothpick. It should come out clean or with a few moist crumbs.
  9. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

If streusel browns too quickly, cover loosely with foil halfway through baking. Use ripe bananas for best sweetness and moisture. For dairy-free, substitute Greek yogurt with coconut yogurt and butter with coconut oil. Avoid overmixing to keep bread tender.
