Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper, leaving an overhang on the long sides, and lightly grease.
  2. Peel ripe bananas and place them in a mixing bowl. Mash with a fork or potato masher until mostly smooth with a few small chunks remaining.
  3. Melt the butter in the microwave or saucepan and let it cool for a minute so it is liquid but not hot.
  4. Add the melted butter, egg, and vanilla extract to the mashed bananas. Stir gently with a fork until combined.
  5. Sprinkle the flour, baking soda, salt, and sugar over the wet mixture. Let sit for a moment to absorb moisture.
  6. Using a rubber spatula, gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix; a few lumps are okay.
  7. Gently fold in the chopped walnuts, distributing them evenly without crushing them.
