  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/3 cup all-purpose flour (for streusel)
  • 1/4 cup granulated sugar (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 3 tablespoons unsalted butter, cold and cubed (for streusel)
  • 1/2 teaspoon cinnamon (for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and dust with flour.
  2. Make the streusel: In a small bowl, combine 1/3 cup flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, and 3 tablespoons cold cubed butter. Mix until coarse crumbs form. Set aside.
  3. Grate 2 medium zucchinis using the medium side of a box grater. Do not squeeze out the liquid.
  4. In a large bowl, cream together 1/2 cup softened butter, 1 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy.
  5. Beat in 2 eggs one at a time, then add 1 teaspoon vanilla extract and 1/2 cup vegetable oil. Mix until combined.
  6. In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt, and 1 teaspoon cinnamon.
  7. Add dry ingredients to wet ingredients in three additions, mixing on low speed just until combined.
  8. Gently fold in the grated zucchini using a spatula.
  9. Pour batter into prepared loaf pan and smooth the top. Sprinkle streusel evenly over the top and press gently.
  10. Bake at 350°F (175°C) for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not squeeze the liquid from the zucchini as it keeps the bread moist. Ensure butter for the streusel is cold to maintain crunch. If the top browns too quickly, cover loosely with foil after 40 minutes. Store in an airtight container at room temperature for up to 3 days.
