These spooky monster eye cupcakes are a fun and easy Halloween treat. Moist chocolate cupcakes are topped with creamy vanilla frosting and goofy gummy eyeballs, making them a hit at any party.

  • 1 ½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (45g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (240ml) buttermilk, room temperature
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup (120ml) hot water
  • 1 cup (226g) unsalted butter, softened
  • 3–4 cups (360-480g) powdered sugar
  • 2 teaspoons vanilla extract
  • 2–3 tablespoons heavy cream or milk
  • A pinch of salt
  • 24–30 gummy eyeballs
  • Green or purple food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate medium bowl, whisk together buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix with a spatula until just combined. Do not overmix.
  5. Pour in hot water and stir gently until batter is smooth and shiny. Batter will be thin.
  6. Divide batter evenly among the 12 liners, filling each about ⅔ full. Tap pan gently to release air bubbles.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 5 minutes, then transfer to a cooling rack to cool completely.
  8. For frosting: In a large bowl, beat softened butter with an electric mixer on medium speed until creamy, about 2 minutes. Add vanilla extract and salt.
  9. Gradually add powdered sugar, one cup at a time, beating on low speed. Add heavy cream one tablespoon at a time until frosting is light and fluffy. Add food coloring if desired.
  10. Once cupcakes are completely cool, transfer frosting to a piping bag fitted with a round tip. Pipe a generous swirl on each cupcake.
  11. Gently press one or two gummy eyeballs into the center of each frosted cupcake.

Notes

For best results, ensure all ingredients are at room temperature. Do not overmix the batter. Cool cupcakes completely before frosting to prevent melting. Frosting can be adjusted with more cream or powdered sugar to reach desired consistency.
