These non-alcoholic champagne jello shots are a festive, crowd-pleasing dessert perfect for New Year’s Eve. They are quick to make, use simple ingredients, and offer a delightful, bubbly flavor without any alcohol.

  • 1 ½ cups non-alcoholic sparkling wine or non-alcoholic champagne
  • ½ cup white grape juice concentrate
  • 3 tablespoons powdered unflavored gelatin (about 3 packets)
  • ¼ cup cold water
  • 2 tablespoons granulated sugar (optional)
  • Fresh raspberries or pomegranate arils (for topping)
  • Edible glitter or gold luster dust (optional)
  • Whipped cream or coconut cream (for serving, optional)

Instructions

  1. Bloom the gelatin: Pour ¼ cup cold water into a small bowl. Sprinkle 3 tablespoons unflavored gelatin evenly over the surface. Let sit for 5-10 minutes until firm and spongy.
  2. Heat the liquid: In a small saucepan, combine 1 ½ cups non-alcoholic champagne and ½ cup white grape juice concentrate. Add 2 tablespoons sugar if using. Heat over medium-low until hot but not boiling (steaming with small bubbles around edges).
  3. Dissolve the gelatin: Remove saucepan from heat. Add bloomed gelatin to hot liquid. Whisk gently until completely dissolved (about 2-3 minutes). Mixture should be clear.
  4. Strain (optional): Pour mixture through a fine-mesh strainer into a liquid measuring cup or bowl with a spout to remove foam or undissolved gelatin.
  5. Fill the molds: Place silicone molds on a baking sheet. Carefully pour liquid into each mold, filling almost to the top. Pop any surface bubbles with a toothpick.
  6. Add fruit: Gently drop one or two raspberries or pomegranate arils into each mold. Let them settle naturally.
  7. Chill: Transfer baking sheet to refrigerator. Let set for at least 4 hours, preferably overnight.
  8. Unmold and serve: Gently press bottom of each silicone mold to pop out jello shots. If stuck, dip bottom in warm water for 5 seconds. Arrange on platter, sprinkle with edible glitter, and add whipped cream right before serving.

Notes

Bloom gelatin properly for smooth texture. Do not overheat liquid. Use fresh fruit like raspberries or pomegranate arils; avoid pineapple and kiwi. Make ahead up to 5 days; store in airtight container in fridge. Do not freeze.
