These Buffalo Chicken Stuffed Jalapeño Poppers take everything you love about buffalo chicken dip and pack it into a jalapeño boat that’s crispy, cheesy, and completely addictive. Perfect for game day or any party.

  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup ranch dressing
  • 2 green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 12 large jalapeño peppers
  • 1 tablespoon olive oil
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Prep the jalapeños: Cut each jalapeño in half lengthwise. Use a paring knife to cut around the white membrane. Use a small spoon or melon baller to scoop out seeds and membranes. Rinse under cold water and pat dry.
  3. Make the filling: In a medium bowl, combine softened cream cheese, shredded chicken, buffalo hot sauce, shredded cheddar, blue cheese (if using), ranch dressing, sliced green onions, garlic powder, and salt. Mix until well combined.
  4. Stuff the peppers: Fill each jalapeño half with the chicken mixture, level with the top of the pepper. Use about 1 to 1.5 tablespoons per half.
  5. Make the topping: In a small bowl, combine panko breadcrumbs, melted butter, and grated Parmesan. Mix with a fork until evenly coated.
  6. Top the poppers: Sprinkle the panko mixture evenly over each stuffed jalapeño half. Press down gently.
  7. Bake: Place stuffed jalapeños on the prepared baking sheet. Bake for 18-22 minutes, until peppers are tender and tops are golden brown and crispy.
  8. Cool and garnish: Let poppers cool on the baking sheet for 5 minutes. Sprinkle with reserved sliced green onions.
  9. Serve immediately with extra ranch or blue cheese dressing for dipping.

Notes

Wear gloves when handling jalapeños to avoid burning your eyes. Use room temperature cream cheese for even mixing. Shred your own cheese for better melting. Don’t overbake—peppers should be tender but still hold their shape. Can be assembled up to 24 hours in advance.
